Healthy Go-To Dinners

Hey y’all! Healthy dinners have become a much bigger thing for us, especially when my husband needs to maintain his weight for work (PFT/CFT season can be ROUGH). We’ve done a lot to replace carbs/pastas by substituting spaghetti squash instead and we also have taken out sugary snacks and try to have more fruit or healthy treats in the house, but I must say I’m still guilty of sneaking pasta and rice dishes from time-to-time when the hubby is at work (shhhhh). Here are some of our favorite go-to healthier dishes:

  • Spaghetti Squash with Homemade Tomato Sauce

    Ingredients:
    – Spaghetti Squash
    – Ground beef, 93% lean
    – 5 tomatoes, diced
    – 2 cloves of garlic, minced
    – 1 medium onion, diced
    – 1t oregano
    – 1t rosemary
    – 1t red pepper flakes
    – Salt/Pepper
    – Olive Oil

    Cut spaghetti squash in half and top with olive oil, salt and pepper then place on a sheet pan. Place in the oven at 400 degrees for 35 minutes.
    In medium skillet, cook ground beef until browned, drain grease then set aside. Add tomatoes, onion, garlic, and seasonings into the skillet and simmer for 15 minutes. Add ground beef into the sauce and stir.
    Once the spaghetti squash is finished cooking, use a fork to scrape out the insides and add to the sauce. (you could also use the spaghetti squash halves as bowls and pour the sauce over). Enjoy!

  • Oven-Baked Fajita Bowls

    Ingredients:
    – Chicken breasts, sliced
    – 3 Bell peppers (green, yellow, red), sliced
    – 1 medium onion, sliced
    – 2 cloves of garlic, minced
    – 1 packet Fajita seasoning mix
    – Salt/Pepper

    Place chicken, onions, bell peppers, garlic on a sheet pan that has been lined with tin foil. Sprinkle fajita seasoning over the top and bake at 375 degrees for 40 minutes. Take out and enjoy!

  • Teriyaki Chicken over Steamed Veggies

    Ingredients:
    – Boneless skinless chicken breasts
    – Low sodium teriyaki sauce
    – Salt/Pepper
    – Frozen, or fresh, veggies (Your choosing, my go to are broccoli, carrots, cauliflower, peas, corn)

    Being one of the most simple dishes to prepare, this is definitely a favorite in our household! Season chicken with salt and pepper then cook in a medium skillet with olive oil. Brush with teriyaki sauce when the chicken is half cooked. Steam vegetables in a pot of boiling water then blanch in an iced bath. Serve and enjoy!

  • Tomato and Spinach Spaghetti Squash

    Ingredients:
    – Spaghetti squash
    – Boneless skinless chicken breasts, sliced
    – 1 cup heavy cream
    – 3 tomatoes, diced
    – Salt/Pepper
    – 2 cups of spinach
    – 1 medium onion, minced
    – 2 cloves of garlic, minced
    – Olive Oil

    Cut spaghetti squash in half and season with olive oil, salt and pepper and place on a sheet pan in the oven at 400 degrees for 35 minutes. In a medium skillet, cook chicken in olive oil until golden brown. Add tomatoes, heavy cream, spinach, salt, pepper, onions and garlic and simmer for 15 minutes.
    Once the spaghetti squash is finished cooking, use a fork to scrape out the insides. Serve over cooked squash and enjoy!
